Ingredients
  

  • 2 tablespoons butter for cooking apples salted or unsalted
  • 3 ½ cups peeled and diced apples about 2-3 large Honeycrisp apples 396 g
  • ½ cup light brown sugar packed for apples
  • 1 teaspoon ground cinnamon for apples
  • ¾ cup light brown sugar packed for cake batter
  • ½ cup unsalted butter melted for cake batter
  • ½ cup vegetable oil neutral flavor for cake batter
  • ½ cup milk whole or 2% for cake batter
  • 2 teaspoons vanilla extract for cake batter
  • 2 large eggs room temperature for cake batter
  • 2 ½ cups all-purpose flour for cake structure
  • 1 teaspoon baking powder for leavening
  • 1 teaspoon baking soda for leavening
  • ½ teaspoon salt balances sweetness
  • ½ teaspoon ground cinnamon for cake batter
  • ¼ teaspoon ground allspice for warm flavor
  • 2 tablespoons light brown sugar for topping packed
  • 1 cup powdered sugar sifted for glaze
  • 2-3 tablespoons milk for glaze adjust thickness
  • ¼ teaspoon vanilla extract for glaze

Method
 

  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch pan and line it with parchment paper, then lightly grease the parchment.
  2. Heat a skillet over medium heat. Add 2 tablespoons butter and melt. Stir in the diced apples, ½ cup brown sugar, and 1 teaspoon cinnamon. Cook, stirring occasionally, until apples are tender and release a syrupy juice, about 8 minutes. Remove from heat.
  3. In a large bowl, whisk together ¾ cup brown sugar and ½ cup melted butter until smooth. Add vegetable oil, milk, vanilla, and eggs; whisk until fully combined.
  4. Add flour, baking powder, baking soda, salt, ½ teaspoon cinnamon, and allspice to the wet ingredients. Whisk until just combined.
  5. Fold all but ½ cup of the cooked apples into the batter using a rubber spatula.
  6. Pour the batter into the prepared pan. Evenly distribute the reserved ½ cup of apples and their juices on top. Sprinkle 2 tablespoons of brown sugar over the batter.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs.
  8. While the cake is baking, prepare the glaze by whisking powdered sugar, 2-3 tablespoons milk, and vanilla in a small bowl until smooth.
  9. Allow the cake to cool for 15 minutes after removing from the oven. Drizzle glaze over the cake, slice, and serve slightly warm.
