Method
 

  1. Combine flour, sugar, and salt in a medium bowl.
  2. Cut cold butter into small cubes and cut into flour mixture until it resembles coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until dough holds together.
  4. Shape dough into a disk, wrap in plastic, and chill in the refrigerator for 1 hour.
  5. Preheat oven to 400°F (200°C).
  6. Roll chilled dough on a floured surface into a roughly 12-inch circle. prep

  8. Toss apple slices with sugar, cinnamon, nutmeg, and lemon juice.
  9. Arrange apples in the center of the dough, leaving a 2-inch border all around.
  10. Fold edges of dough over apples, pleating as needed to create rustic edges.
  11. Brush dough edges with egg wash and sprinkle coarse sugar on top if desired.
  12. Bake galette for 35 minutes, or until crust is golden and apples are tender.
