Method
 

  1. Dice apples, then cook with butter, brown sugar, cinnamon, and salt until softened.
  2. Stir cornstarch into water, add to apples, cook until thick and gooey, then stir in vanilla and cool completely.
  3. Lay out egg roll wrappers, keep covered with damp towel, and have a small bowl of water ready.
  4. Place filling in center of wrapper, fold and roll tightly, sealing edges with water.
  5. Fry until golden brown, dust with cinnamon sugar, and serve warm with caramel sauce or ice cream.
