- Dice apples, then cook with butter, brown sugar, cinnamon, and salt until softened.
- Stir cornstarch into water, add to apples, cook until thick and gooey, then stir in vanilla and cool completely.
- Lay out egg roll wrappers, keep covered with damp towel, and have a small bowl of water ready.
- Place filling in center of wrapper, fold and roll tightly, sealing edges with water.
- Fry until golden brown, dust with cinnamon sugar, and serve warm with caramel sauce or ice cream.
