Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 cup Brown sugar - packed
  • 1 ½ cups Unsweetened applesauce
  • ½ cup Vegetable oil - or substitute (see substitutions)
  • 2 Large eggs - room temperature
  • 1 teaspoon Vanilla extract
  • 2 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • ½ teaspoon Ground allspice
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • Optional Chopped walnuts, raisins, or chocolate chips - Up to 1 cup total

Method
 

  1. Preheat the oven to 350°F (180°C) and prepare a 9x13 inch pan by greasing it and lining with parchment paper.
  2. In a large bowl, whisk together the applesauce, vegetable oil, eggs, and vanilla extract until combined.

  3. Add the granulated sugar and brown sugar to the wet mixture and stir until mostly smooth.
  4. In a separate bowl, whisk together the flour, cinnamon, nutmeg, allspice, salt, and baking soda.

  5. Add the dry ingredients to the wet ingredients and stir just until fully mixed. Fold in any optional add-ins like nuts or raisins.
  6. Pour the batter into the prepared pan, spread evenly, and bake for 35–40 minutes until a toothpick comes out clean. Cool slightly before serving.
