Method
 

  1. Preheat the oven to 375°F (190°C). Spray a 2-quart (or 9x9-inch) baking dish with nonstick cooking spray.
  2. To make the streusel topping, combine brown sugar, self-rising flour, and softened butter in a bowl. Use a fork to mix them until crumbly. Stir in the oats and chopped pecans. Set aside.
  3. For the filling, whisk together self-rising flour, sugar, and milk in a medium bowl until combined. Whisk in melted butter. Pour this mixture into the prepared baking dish.
  4. Arrange banana slices evenly on top of the filling.
  5. Sprinkle the streusel topping evenly over the bananas.
  6. Bake for 45-50 minutes or until the cobbler is golden brown and the center is no longer jiggly.
  7. Remove from the oven and let cool for a few minutes before serving. Optional: Serve with vanilla ice cream and extra banana slices.
