Ingredients
  

  • ½ cup unsalted butter softened
  • cup granulated sugar
  • 2 large eggs room temperature lightly beaten
  • 3 bananas very ripe coarsely mashed with a fork
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour measured correctly
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips divided ¾ cup for batter ¼ cup for topping

Method
 

  1. Preheat the oven to 350˚F and line a 12-count muffin tin with paper muffin cups.
  2. In a mixing bowl, cream the softened butter with the granulated sugar until light and fluffy.
  3. Add the lightly beaten eggs to the butter mixture and blend well.
  4. Stir in the mashed bananas and vanilla extract until everything is combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Add the dry mixture to the wet ingredients and mix until just incorporated.
  7. Gently fold in ¾ cup of the chocolate chips into the batter.
  8. Divide the batter evenly among the 12 muffin cups and sprinkle the remaining ¼ cup of chocolate chips on top.
  9. Bake at 350˚F for 25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  10. Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
