Ingredients
  

White Cake
  • 3 ¼ cups all-purpose flour spooned and leveled for accurate measuring
  • ¼ cup cornstarch helps create a soft tender crumb
  • 2 teaspoons baking powder fresh for best rise
  • ½ teaspoon baking soda balances the acidity
  • 1 teaspoon salt fine sea salt preferred
  • ½ cup unsalted butter softened to room temperature
  • ½ cup canola or vegetable oil for extra moisture
  • 1 ¾ cups granulated sugar for sweetness and structure
  • 1 tablespoon vanilla bean paste or pure vanilla extract
  • 5 egg whites room temperature for better volume
  • 1 cup sour cream room temperature or plain Greek yogurt
  • 1 cup buttermilk room temperature
Whipped Cream Filling
  • 8 ounces cream cheese softened completely
  • ¼ cup powdered sugar sifted
  • 2 tablespoons heavy cream room temperature
  • 2 cups heavy whipping cream well chilled
  • ¼ cup powdered sugar sifted
  • 1 teaspoon pure vanilla extract for flavor
Berry Filling
  • 2 ½ cups strawberries washed hulled finely diced
  • ¾ cup blackberries halved if large
  • ¾ cup blueberries washed and dried
  • 1 tablespoon granulated sugar helps release the berry juices

Method
 

  1. Preheat the oven to 350°F. Grease two 8-inch round cake pans, line the bottoms with parchment paper, then lightly grease the parchment as well.
  2. Whisk together the flour, cornstarch, baking powder, baking soda, and salt until evenly combined, then set aside.
  3. Beat the softened butter, oil, and granulated sugar on high speed until the mixture becomes pale, fluffy, and well aerated, about 2 minutes.
  4. Blend in the vanilla bean paste, egg whites, and sour cream until the batter is smooth and fully incorporated.
  5. Mix the dry ingredients into the batter alternately with the buttermilk on low speed, stirring only until no dry streaks remain. Scrape the bowl once to ensure everything is evenly mixed.
  6. Divide the batter evenly between the prepared pans and bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. Combine the strawberries, blackberries, blueberries, and sugar in a bowl. Toss gently and let the berries rest while preparing the frosting.
  9. Beat the softened cream cheese with the powdered sugar and heavy cream until smooth and creamy with no lumps remaining.
  10. Whip the chilled heavy cream with the remaining powdered sugar and vanilla until it begins to thicken. Fold in the cream cheese mixture and continue mixing on low speed until stiff peaks form.
  11. Trim the tops of the cooled cakes if needed. Spread about 2 cups of whipped cream over the first layer, scatter about 1 cup of the prepared berries evenly across the cream, then add a thin layer of whipped cream over the berries.
  12. Place the second cake layer on top with the flat bottom facing upward. Cover the top and sides with the remaining whipped cream, then decorate with the remaining berries for a rustic naked-cake finish.
  13. Chill the finished cake for about 10 minutes before slicing with a sharp knife for cleaner servings.
