  • 1 can (15 oz) Black Beans - Drained and rinsed
  • 3 large Eggs - Room temperature
  • cup Coconut Oil (melted) - Can substitute with vegetable oil
  • ¼ cup Unsweetened - Cocoa Powder
  • cup Honey or Maple Syrup - Sweetener of choice
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon teaspoon - Baking Powder
  • ½ teaspoon Salt
  • ½ cup Mini Chocolate Chips
  • 2 tablespoons Dark Chocolate Chips
  • Optional ¼ cup Walnuts - Chopped
  • Optional 1 tablespoon Instant Coffee
  • Optional ½ tablespoon Cinnamon

Method
 

  1. Prepare all the ingredients. Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan. Rinse and drain the black beans thoroughly, then pat them dry with paper towels.
  2. Add the black beans, eggs, and oil to a food processor or blender and blend until completely smooth, with no chunks of beans remaining.
