  • 3 cups cottage cheese whole milk full-fat for the creamiest texture
  • ½ cup maple syrup pure maple syrup for natural sweetness
  • 1 teaspoon vanilla extract pure vanilla preferred
  • 2 to 3 tablespoons cocoa powder unsweetened adjust for chocolate intensity
  • 2 tablespoons creamy almond butter smooth and unsalted
  • ½ cup protein brownie bites chopped into bite-sized pieces
  • 2 tablespoons chocolate syrup plus extra for serving if desired
  • ¼ cup chocolate chips mini or regular semi-sweet

Method
 

  1. Add the cottage cheese, maple syrup, vanilla extract, cocoa powder, and almond butter to a blender until all ingredients are ready.
  2. Process the mixture on high speed until completely silky and free of any cottage cheese curds.
  3. Transfer the chocolate mixture into a freezer-safe airtight container, spreading it into an even layer.
  4. Fold the chopped brownie bites, chocolate syrup, and chocolate chips gently through the mixture until evenly distributed.
  5. Cover tightly and freeze for about 5 hours, or until the ice cream is firm enough to scoop.
  6. Remove the container from the freezer and let it rest at room temperature for 15 to 20 minutes. Break up the frozen mixture with a sturdy spoon and stir briefly until creamy.
  7. Scoop into bowls and finish with extra brownie bites, chocolate syrup, or chocolate chips if desired before serving.
