Chocolate Peanut Butter Rice Krispie Cups

No-bake chocolate peanut butter rice krispie cups are the perfect sweet treat when you want something quick, easy, and oven-free. With crunchy cereal, rich chocolate, and creamy peanut butter, these bite-sized cups taste like a cross between a Reese’s and a Rice Krispie treat.

Ingredients
  

  • 2 cups Rice Krispies cereal
  • 1 cup Chocolate chips - Semi-sweet or milk
  • ¾ cup Creamy peanut butter
  • ½ cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • ¼ cup Chocolate chips - Extra, for topping (optional)
  • 2 tablespoon Chopped peanuts - Optional garnish

Equipment

  • 1 Mini muffin tin (12-cup size)
  • 12 mini muffin paper liners or silicone cups
  • 2 Microwave-safe bowls
  • 1 Large mixing bowl
  • Measuring cups and spoons
  • 1 spoon for scooping

Method
 

  1. Line a mini muffin tin with paper liners or spray silicone cups lightly with cooking spray. Measure out all ingredients.
  2. In a microwave-safe bowl, heat chocolate chips in 30-second intervals, stirring between each, until smooth. Let cool for 2–3 minutes.
  3. In a large mixing bowl, stir peanut butter and powdered sugar until smooth. Mix in vanilla and salt. Add melted chocolate and stir well. Gently fold in Rice Krispies until evenly coated.
  4. Spoon mixture into prepared cups, filling about ¾ full. Press lightly to compact. Top with extra chocolate chips or chopped peanuts if desired.
  5. Refrigerate for 30 minutes until firm before serving.
