Ingredients

  • 2 cups Rice Krispies cereal
  • 1 cup Chocolate chips - Semi-sweet or milk
  • ¾ cup Creamy peanut butter
  • ½ cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • ¼ cup Chocolate chips - Extra, for topping (optional)
  • 2 tablespoon Chopped peanuts - Optional garnish

Instructions

  • Line a mini muffin tin with paper liners or spray silicone cups lightly with cooking spray. Measure out all ingredients.
  • In a microwave-safe bowl, heat chocolate chips in 30-second intervals, stirring between each, until smooth. Let cool for 2–3 minutes.
  • In a large mixing bowl, stir peanut butter and powdered sugar until smooth. Mix in vanilla and salt. Add melted chocolate and stir well. Gently fold in Rice Krispies until evenly coated.
  • Spoon mixture into prepared cups, filling about ¾ full. Press lightly to compact. Top with extra chocolate chips or chopped peanuts if desired.
  • Refrigerate for 30 minutes until firm before serving.
