  • 2 oz Dark chocolate - At least 60% cacao
  • 1 ½ cups Whole milk - Warmed
  • ½ cup Heavy cream - Warmed
  • 4 Large egg yolks - Room temperature
  • ½ cup Granulated sugar
  • 3 tablespoon Cornstarch
  • 2 tablespoon Unsalted butter - Cubed
  • 1 teaspoon Pure vanilla extract - Or vanilla bean paste
For the Crust:
  • 1 Pre-baked pie crust - Graham cracker or traditional
For the Topping:
  • 1 cup Heavy whipping cream - Chilled
  • 2 tablespoon Powdered sugar
  • ½ teaspoon Vanilla extract
  • Chocolate shavings - For garnish

Method
 

  1. Pre-bake the crust and let it cool completely
  2. Heat milk and cream, then whisk yolks with sugar and cornstarch
