Ingredients
  

  • 8 ounces cream cheese softened to room temperature
  • 1 cup light brown sugar firmly packed
  • 3 tablespoons ground cinnamon freshly ground if possible
  • 2 teaspoons vanilla extract pure vanilla preferred
  • ½ teaspoon ground nutmeg freshly grated or ground
  • ¼ teaspoon salt fine sea salt
  • 3 large eggs room temperature
  • 1 cup heavy whipping cream cold
  • ¼ cup all-purpose flour sifted
  • 1 unbaked 9-inch pie crust homemade or refrigerated
  • Optional whipped cream for serving

Method
 

  1. Preheat the oven to 350°F and place the unbaked pie crust into a 9-inch pie plate if needed.
  2. Beat the softened cream cheese with the brown sugar until the mixture is smooth and creamy with no visible lumps.
  3. Blend in the cinnamon, vanilla extract, nutmeg, and salt until the spices are evenly distributed.
  4. Beat in the eggs individually, mixing well after each addition before adding the next one.
  5. Pour in the heavy cream, then sprinkle in the flour and stir only until the filling becomes smooth and fully incorporated.
  6. Transfer the filling into the prepared pie crust and spread it evenly.
  7. Bake for 45 to 50 minutes, until the edges are puffed and set while the center still has a gentle wobble.
  8. Cool the pie completely on a wire rack, then cover and refrigerate for about 4 hours, or until fully chilled and firm.
  9. Slice the pie with a warm knife and serve cold with whipped cream if desired.
