Ingredients
  

For the Streusel:
  • 3 tablespoon unsalted butter cold
  • ½ cup brown sugar packed
  • ½ cup all-purpose flour
  • 1 teaspoon cinnamon ground
  • ¼ teaspoon salt
For the Banana Bread:
  • ½ cup unsalted butter softened
  • 1 ¼ cups granulated sugar
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 cup very ripe mashed bananas about 2 large bananas
  • ¾ cup buttermilk room temperature
  • 1 ¾ cups all-purpose flour
  • 2 teaspoon cinnamon ground
  • 1 teaspoon baking soda
  • ¾ teaspoon salt

Method
 

  1. Cut the cold butter into small cubes and place it into a small bowl.
  2. Add the brown sugar, flour, cinnamon, and salt to the bowl.
  3. Use your fingers to mix the ingredients together until you have large crumbles.
  4. Chill the streusel mixture in the fridge while you prepare the banana bread.
  5. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
  6. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer.
  7. Add the eggs and vanilla extract, and mix for about 1 minute, until the mixture is pale and fluffy.
  8. Stir in the mashed bananas and buttermilk until fully combined.
  9. Add the flour, cinnamon, baking soda, and salt to the bowl, and mix until the batter is smooth and uniform.
  10. Pour the batter into the prepared loaf pan, spreading it evenly.
  11. Sprinkle the chilled streusel evenly over the top of the batter.
  12. Bake the banana bread in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean with only a few moist crumbs.
  13. Let the banana bread cool in the pan for 30 minutes before transferring it to a wire rack to cool completely.
  14. Enjoy the banana bread warm or let it cool completely for the best flavor and texture.
