Ingredients
  

  • ¾ cup 165g light or dark brown sugar lightly packed
  • ¼ cup 55g granulated sugar for sweetness
  • ½ cup 115g unsalted butter melted and slightly cooled
  • 1 large egg + 1 extra egg yolk room temperature extra yolk adds chewiness
  • 2 teaspoons pure vanilla extract for flavor depth
  • 1 teaspoon orange zest adds a fresh citrus note
  • ½ teaspoon baking powder helps with rise
  • ½ teaspoon 2g kosher salt balances sweetness
  • 1and ⅓ cups 175g all-purpose flour base for the batter
  • ¾ cup 140g bittersweet or dark chocolate chunks for a rich intense flavor
  • ¾ cup 115g dried cranberries adds a tart contrast to the sweetness

Method
 

  1. Take the eggs out of the refrigerator at least 30 minutes before starting.
  2. Measure all ingredients and set aside.
  3. Melt the butter and let it cool slightly.
  4. Position an oven rack in the center of the oven and preheat to 325°F (165°C).
  5. Line an 8-inch (20 cm) square or 9-inch (23 cm) round pan with parchment paper or grease with non-stick spray.
  6. In a large bowl, whisk the brown sugar, granulated sugar, and melted butter together until smooth.
  7. Add the egg, extra yolk, vanilla extract, and orange zest to the bowl, and whisk for about 30 seconds to combine.
  8. Add the baking powder, salt, and flour, and stir with a spatula or spoon for about 30 seconds to develop gluten for chewiness.
  9. Fold in the chocolate chunks and dried cranberries.
  10. Transfer the mixture into the prepared pan and spread evenly.
  11. Bake for 28-33 minutes, or until a toothpick inserted comes out clean.
  12. Let the pan cool for at least 15 minutes on a cooling rack before slicing.
