Ingredients
  

  • ¾ cup Medjool dates pitted 6 ounces
  • cup water
  • ½ cup almond butter or other nut butter of choice
  • 1 tablespoon ground flax seeds
  • 5 tablespoons cacao powder or cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon balsamic vinegar
  • Pinch of salt

Method
 

  1. Preheat the oven to 350ºF and grease a mini muffin tin with your preferred oil.
  2. Add the dates and water to a food processor and process until the dates break down into a paste.
  3. Add the almond butter, ground flax, cacao powder, baking soda, vanilla extract, balsamic vinegar, and salt to the food processor, and process again until a thick, sticky dough forms.
  4. Use a tablespoon or a 1-ounce cookie scoop to scoop the dough into the prepared mini muffin tin. Flatten the tops of the dough mounds with wet fingers to prevent sticking.
  5. Bake the brownies for 12 to 15 minutes, or until the tops look dry but the centers still feel slightly soft.
  6. Allow the brownies to cool completely in the pan for about 30 minutes before removing them. Run a knife around the edges to loosen them from the pan.
