Ingredients
  

Toasted Pecans:
  • cups pecans chopped
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt
Cookie Dough:
  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs room temperature
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract

Equipment

  • Baking sheets
  • Parchment paper
  • Cookie scoop
  • Wire cooling racks
  • Medium skillet for toasting nuts

Method
 

Toast Pecans:
  1. Heat skillet over medium heat
  2. Melt 2 tablespoons butter
  3. Add pecans and salt
  4. Toast 5-7 minutes until golden
  5. Cool completely
Make Dough:
  1. Cream butter and sugars (3-4 minutes)
  2. Beat in eggs and vanilla
  3. Mix in dry ingredients
  4. Fold in cooled pecans
Bake:
  1. Preheat oven to 350°F
  2. Scoop 2-tablespoon portions
  3. Space 2 inches apart
  4. Bake 11-13 minutes
  5. Cool 5 minutes on sheet
