Ingredients
Method
- Preheat the oven to 350°F (175°C), butter a 7-inch springform pan, and coat the inside with a light layer of sugar.
- Combine the cocoa powder and instant espresso in a medium mixing bowl.
- Heat the milk in a large microwave-safe bowl or measuring cup until very hot and beginning to foam, leaving plenty of room to prevent overflow.
- Immediately pour the hot milk over the cocoa mixture and stir until smooth and lump-free.
- Add the oil, sugar, egg, and sour cream, then whisk vigorously until the mixture is evenly combined.
- Add the flour, baking powder, and salt, folding gently just until no visible streaks of flour remain.
- Pour the batter into the prepared springform pan and bake for 30–35 minutes, until the center is set and an instant-read thermometer inserted into the middle registers about 205°F (96°C).
- Let the cake cool in the pan for at least 15 minutes, then transfer it to a cooling rack; prepare the French silk filling while the cake continues cooling.
- Finely chop the semi-sweet chocolate and keep it ready for the warm egg mixture.
- Whisk the eggs and sugar together in a medium saucepan over medium heat, stirring vigorously until the mixture reaches 170°F (76°C).
- Take the saucepan off the heat and immediately stir in the chopped chocolate until completely melted and smooth, then allow the mixture to cool for at least 20 minutes.
- Beat the heavy whipping cream in a medium bowl with a hand or stand mixer until stiff peaks form, then refrigerate it until needed.
- Beat the softened butter and salt with a mixer for 3–4 minutes, until pale and fluffy.
- With the mixer running, gradually add generous spoonfuls of the cooled chocolate mixture, allowing each addition to blend in before adding more; beat the completed mixture for another 2–3 minutes until fluffy.
- Gently fold the chilled whipped cream into the chocolate mixture until evenly incorporated without deflating it.
- Once the cake has reached room temperature, carefully trim a thin layer from the top to create an even surface.
- Line the springform pan with plastic wrap or parchment, return the cake to the pan, and spread the French silk filling evenly over the top.
- Cover the cake and refrigerate it for at least 2 hours so the chocolate layer can firm up completely.
- Combine the chilled heavy cream, sugar, vanilla, and salt in a medium mixing bowl or stand mixer bowl, then whip until soft peaks form.
- Release the chilled cake from the springform pan, spread the whipped cream over the top, garnish with chocolate curls if desired, then slice and serve.
