These homemade fried apple pies are crispy on the outside with a warm, cinnamon apple filling inside.

Ingredients
  

  • 2 cups all-purpose flour for the pastry
  • 1 teaspoon salt for the pastry
  • ½ cup chilled shortening or butter for the pastry
  • ½ cup cold water for the pastry
  • 2 apples peeled core and diced for the filling
  • ¼ cup white sugar for the filling or adjust to taste
  • teaspoon ground cinnamon for the filling or adjust to taste
  • 1 quart oil for frying or as needed

Method
 

  1. Sift the flour and salt into a large bowl.
  2. Cut in the shortening using a pastry blender or 2 knives until the mixture resembles coarse crumbs.
  3. Gradually add cold water, 1 tablespoon at a time, stirring with a fork until the mixture begins to form a dough. Once it can hold together when pressed, wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a saucepan, combine the diced apples, sugar, and cinnamon. Cook over low heat, covered, until the apples soften. Mash with a fork until the mixture reaches a thick applesauce consistency. Set aside to cool.
  5. Roll out the dough on a floured surface to ⅛-inch thickness and cut into 4-inch rounds using a cookie cutter.
  6. Place 1 heaping tablespoon of the apple filling onto the center of each dough round. Moisten the edges with water, fold in half, and press the edges with a fork to seal. Repeat with remaining dough and filling.
  7. Heat oil in a deep fryer or large saucepan to 375°F (190°C). Fry the pies in batches, turning them until golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain.
  8. Serve warm and enjoy!
