  • 1 roll Refrigerated sugar cookie dough - (16.5 oz) or use homemade sugar cookie dough
  • ½ teaspoon Vanilla extract - Optional, for enhanced flavor
For the Cream Cheese Frosting:
  • 8 oz PHILADELPHIA cream cheese - Softened
  • cup Granulated sugar
  • ½ teaspoon Vanilla extract
  • 1 tablespoon Fresh lemon juice - Optional, brightens flavor
For the Fruit Topping:
  • 2-3 cups Fresh fruit - Strawberries, kiwi, blueberries, etc.
  • ¼ cup Apricot preserves - Optional glaze
  • 1 tablespoon Water - Mix with preserves for glaze

Method
 

  1. Preheat Oven Preheat your oven to 350°F (175°C) and line a 12-inch pizza pan or baking sheet with parchment paper.
  2. Press sugar cookie dough into a 12-inch circle about ¼-inch thick on the pan.
  3. Bake for 12–15 minutes until edges are golden and center is set. Cool completely on a wire rack.
  4. Beat softened cream cheese until fluffy. Add sugar, vanilla, and lemon juice (if using). Mix until smooth.
  5. Spread cream cheese frosting evenly over cooled cookie crust, leaving a small border.
  6. Wash and dry fruit thoroughly. Slice larger fruits like kiwi and strawberries into thin pieces.
  7. Arrange fruit in a desired pattern—concentric circles, rainbow, or rustic.
  8. Microwave apricot preserves and water for 30 seconds, stir, and brush over fruit for shine.
  9. Refrigerate assembled fruit pizza for at least 20–30 minutes before slicing and serving.
