Instructions

  • Preheat Oven Preheat your oven to 350°F (175°C) and line a 12-inch pizza pan or baking sheet with parchment paper.
  • Press sugar cookie dough into a 12-inch circle about ¼-inch thick on the pan.
  • Bake for 12–15 minutes until edges are golden and center is set. Cool completely on a wire rack.
  • Beat softened cream cheese until fluffy. Add sugar, vanilla, and lemon juice (if using). Mix until smooth.
  • Spread cream cheese frosting evenly over cooled cookie crust, leaving a small border.
  • Wash and dry fruit thoroughly. Slice larger fruits like kiwi and strawberries into thin pieces.
  • Arrange fruit in a desired pattern—concentric circles, rainbow, or rustic.
  • Microwave apricot preserves and water for 30 seconds, stir, and brush over fruit for shine.
  • Refrigerate assembled fruit pizza for at least 20–30 minutes before slicing and serving.
