  • ½ teaspoon Xanthan gum
  • ¼ teaspoon Fine sea salt
  • ½ teaspoon Baking powder

Binding Elements:

  • 3 Large eggs - room temperature
  • 2 tablespoon Greek yogurt - or sour cream
  • ½ teaspoon Espresso powder - optional, enhances chocolate

Optional Add-Ins:

  • ½ cup Extra chocolate chips - for topping
  • cup Chopped walnuts - or pecans, optional
  • Sea salt flakes - sprinkle on top, optional

Instructions

  • Preheat oven to 350°F. Line an 8x8 inch pan with parchment paper. Melt butter and let it cool slightly.
  • In a large bowl, whisk melted butter with both sugars. Beat in eggs one at a time.

  • Add vanilla and Greek yogurt. Mix until smooth and glossy.
  • Sift almond flour, cocoa powder, tapioca starch, baking powder, salt, and xanthan gum. Fold into wet mixture. Let rest 10 minutes.
