Method
 

  1. Preheat your oven to 350°F (180°C) and generously grease your donut pan with olive oil or cooking spray.
  2. In a large bowl, whisk together the Greek yogurt, sugar, milk, egg, olive oil, vanilla extract, and lemon zest until smooth and pale.
  3. Sift the flour, baking powder, and salt directly into the same bowl.
  4. Gently stir the dry ingredients into the wet mixture until just combined. Don’t overmix; some lumps are fine.
  5. Carefully spoon the batter into the donut pan, filling each mold about three-quarters full. Use a spoon or piping bag to assist.
  6. Bake for 10-12 minutes or until the donuts spring back when touched. Allow them to cool for a few minutes before flipping them out of the pan.
  7. Optionally, sift powdered sugar on top of the donuts before serving.
