Method
 

  1. Whisk together the flour, brown sugar, baking powder, baking soda, and salt in a medium bowl.

  3. Gradually stir the dry ingredients into the wet mixture, mixing gently until just combined. Avoid over-mixing to keep the pancakes fluffy.
  4. Heat a large nonstick pan over medium heat and spray with cooking spray. Once hot, pour ⅓ cup of batter into the pan to form each pancake. Cook until bubbles appear on the surface and the bottom is golden, about 2-3 minutes. Flip and cook for another 1-2 minutes until fully cooked.
