Ingredients

  • 1 cup vanilla protein powder
  • 1 cup almond flour
  • ¼ cup coconut flour
  • ½ cup sugar-free sweetener
  • 1 large egg
  • ¼ cup unsweetened almond milk
  • cup coconut oil melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup sugar-free chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  • In a large bowl, mix protein powder, almond flour, coconut flour, sweetener, baking powder, and salt.
  • In separate bowl, whisk egg, melted coconut oil, almond milk, and vanilla.
  • Combine wet and dry ingredients until well mixed. Fold in chocolate chips.
  • Let dough rest 5 minutes.
  • Scoop 2 tablespoon portions onto baking sheet. Flatten slightly.
  • Bake 12-15 minutes until edges are golden.
  • Cool on baking sheet 5 minutes before transferring to wire rack.

Notes

  • Don't overbake - cookies should be slightly soft when removed
  • Adjust almond milk if needed for right dough consistency
  • Optional: sprinkle with sea salt before baking
