- Preheat the oven to 375°F (190°C) and prepare all of your ingredients before assembling the pie.
- Fit one pie crust into a 9-inch pie dish, gently pressing it into the bottom and sides.
- Combine the granulated sugar, brown sugar, tapioca, orange zest, orange juice, salt, and optional cinnamon in a large mixing bowl until evenly blended.
- Fold the huckleberries and optional shredded apple into the sugar mixture, stirring carefully so the berries remain intact.
- Let the filling stand for 15 minutes to allow the tapioca to absorb moisture and begin thickening.
- While the filling rests, cut the remaining pie crust into ¼-inch strips on a lightly floured surface.
- Transfer the berry mixture into the prepared pie shell and scatter the pieces of butter over the top.
- Arrange the dough strips in a lattice pattern over the filling, then seal and crimp the edges neatly.
- Cover the pie edges with a shield or foil, brush the lattice with milk, and sprinkle the top with sugar.
- Bake the pie for 60 minutes, removing the crust shield during the final 15 minutes, until the filling bubbles and the crust turns golden.
- Allow the pie to cool for at least 10–15 minutes before slicing and serving, if desired, with vanilla ice cream.
