Ingredients

  • 1 cup JIF Creamy Peanut Butter
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • teaspoon baking soda
  • Extra sugar for rolling

Instructions

  • Heat oven to 350°F. Line baking sheets with parchment.
  • Mix butter, JIF peanut butter, and both sugars until fluffy (3-4 min).
  • Beat in eggs one at a time.
  • Combine flour, baking powder, salt, and baking soda in separate bowl.
  • Mix dry ingredients into wet just until combined.
  • Roll into 1½-inch balls, coat in sugar.
  • Place on baking sheet. Press with fork in criss-cross pattern.
  • Bake 10-12 minutes until edges are light golden.
  • Cool 5 minutes on pan, then transfer to rack.

Notes

  • Don't overbake! Cookies should look slightly underdone
  • Use room temperature butter and eggs
  • Dip fork in sugar if it sticks to dough
  • Store in airtight container up to 5 days
