Ingredients
  

  • cups all-purpose flour spooned and leveled
  • 2 teaspoons baking powder
  • ¾ teaspoon sea salt
  • ½ cup cane sugar
  • 1 tablespoon lemon zest fresh from about 1 lemon
  • ¾ cup whole milk Greek yogurt for creaminess
  • ½ cup extra-virgin olive oil plus extra for greasing
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract pure
  • cups blueberries fresh or frozen do not thaw
  • Lemon glaze optional for drizzling

Method
 

  1. Preheat the oven to 350°F and grease an 8x4 or 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, combine the cane sugar and lemon zest. Use your fingers to rub the zest into the sugar until well incorporated. This releases the oils from the zest.
  4. Add the yogurt, olive oil, eggs, and vanilla extract to the sugar mixture. Whisk everything together until smooth.
  5. Add the dry ingredients to the wet ingredients and stir gently until just combined. Fold in the blueberries. The batter will be thick.
  6. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  7. Place the pan in the oven and bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool completely before removing from the pan. If desired, drizzle with lemon glaze.
