Ingredients
  

For the Lemon Sugar:
  • ½ cup 100 g granulated white sugar (For coating cookies)
  • ½ tablespoon 5 g lemon zest (Fresh zest for extra flavor)
For the Lemon Cookies:
  • 2 ¾ cups 344 g all-purpose flour spooned and leveled (For the base of the dough)
  • ½ teaspoon baking powder Leavening agent
  • ½ teaspoon baking soda Leavening agent
  • ½ teaspoon salt For balance
  • 1 cup 200 g granulated white sugar (For the dough)
  • 2 ½ tablespoon 25 g lemon zest (Adds fresh lemon flavor)
  • 1 cup 227 g unsalted butter very softened (For a creamy dough texture)
  • 1 egg at room temperature (Provides structure and moisture)
  • 1 teaspoon vanilla extract For added flavor

Method
 

  1. Combine the granulated sugar and lemon zest in a medium bowl. Rub the zest and sugar together using your fingertips to release the lemon oils. Set aside.
  2. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk the flour, baking powder, baking soda, and salt together. Set aside.
  4. In a large bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingertips to enhance the flavor.
  5. Add the softened butter to the sugar and zest mixture. Use an electric mixer on high speed to cream the butter, sugar, and zest for 1-2 minutes, until light and fluffy.
  6. Add the egg and vanilla extract to the bowl, then mix on medium speed until the mixture becomes pale and fluffy, about 1-2 minutes.
  7. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  8. Scoop 2 tablespoons of dough and roll into balls. Roll the dough balls in the prepared lemon sugar.
  9. Place the dough balls 2 inches apart on the prepared baking sheets. Slightly flatten each ball into a circle.
  10. Bake the cookies in batches of 6-8 for 9-10 minutes or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack to finish cooling.
