Instructions
Check each Medjool date for pits. If they’re firm or dry, soak them in warm water for 10 minutes, then drain and pat dry completely.
Add raw almonds or walnuts to the food processor. Pulse about 10 times until chopped finely but not turned into nut butter.
Add pitted dates, cocoa powder, rolled oats, vanilla extract, and sea salt to the food processor. Process for 1–2 minutes until the mixture looks like wet sand and clumps together when pinched.
Test the mixture by squeezing a small amount in your hand. If it crumbles, add another date or a splash of water. If too sticky, add a bit more oats or cocoa powder.
Scoop out tablespoon-sized portions of the mixture. Roll between your palms into smooth, even balls.
Roll the brownie bites in cocoa powder, crushed nuts, coconut flakes, or your preferred coating.
Place bites in an airtight container. Refrigerate for up to 2 weeks or freeze up to 3 months. Optional: chill for 10 minutes before serving for a firmer texture.
