Ingredients
  

  • 1 cup creamy peanut butter Use smooth peanut butter for best results
  • ½ cup honey or maple syrup for a vegan version
  • 2 ¾ cups rolled oats Old-fashioned oats work best
  • ½ cup dark chocolate chips Choose semi-sweet or dairy-free depending on preference

Method
 

  1. In a microwave-safe bowl, combine 1 cup of creamy peanut butter and ½ cup of honey (or maple syrup). Heat in 20-second increments until the mixture is melted, stirring after each increment to combine.
  2. Add 2 ¾ cups of rolled oats to the melted peanut butter and honey mixture. Stir with a spatula until well combined.
  3. Gently fold in ½ cup of dark chocolate chips, mixing until evenly distributed.
  4. Line an 8x8-inch pan with parchment paper and lightly spray it with non-stick spray. Press the peanut butter-oat mixture into the prepared pan, using your hands or a spatula to ensure it's compact.
  5. Refrigerate the pan for 30-60 minutes until the bars are set and firm. After chilling, cut into 16 squares and serve.
