Ingredients
  

For the Crust:
  • ¼ cup + 2 tablespoon unsalted butter softened
  • ¼ cup + 2 tablespoon granulated white sugar
  • 2 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
For the Peach Filling:
  • 4 cups sliced and chopped peaches about ½-inch pieces
  • ¼ cup + 2 tablespoon cornstarch
  • ½ cup granulated white sugar
  • 1 ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
For the Crumble Topping:
  • ¼ cup unsalted butter softened
  • ¼ cup granulated white sugar
  • 2 tablespoon brown sugar
  • ½ cup + 2 tablespoon all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
For the Glaze (Optional):
  • ¼ cup powdered sugar
  • 1 ½ teaspoon water

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Line an 8x8" metal baking pan with parchment paper and set aside.
  3. In a medium bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract for about 3 minutes until light and fluffy.
  4. Add the flour, salt, and cinnamon to the mixture and mix until combined. The dough will be dry and crumbly.
  5. Press the dough evenly into the prepared pan, making sure it's tightly packed.
  6. In a large bowl, combine the peaches with sugar, cornstarch, vanilla extract, and cinnamon. Toss gently to coat the peaches.
  7. Let the mixture sit for about 10 minutes to release some juices.
  8. Pour the peach filling over the crust in the prepared pan.
  9. In a bowl, mix together the butter, granulated sugar, and brown sugar until well combined.
  10. Add the flour, salt, and cinnamon and mix until the mixture forms crumbles. The texture should be crumbly and slightly sticky.
  11. Sprinkle the crumble topping evenly over the peach filling.
  12. Bake the cobbler for 50 minutes uncovered. After 50 minutes, cover with aluminum foil and bake for another 30 minutes.
  13. Allow the cobbler to cool completely in the pan, at least 4 hours, before slicing.
  14. For the glaze, mix the powdered sugar and water until smooth. Drizzle the glaze over the bars and allow it to set.
  15. Cut into 16 bars and enjoy!
