- Preheat the oven to 375°F and lightly grease a 9x13-inch baking pan. If using a glass or dark-colored pan, reduce the oven temperature to 350°F.
- Whisk together the sugar, flour, baking powder, salt, and cinnamon until evenly combined.
- Cut the cold butter into the flour mixture until coarse crumbs form, then stir in the beaten egg until the mixture becomes moist but still crumbly.
- Firmly press a little more than half of the crumb mixture into the prepared pan to create an even crust.
- Whisk together the sugar, cornstarch, and cinnamon for the filling, then gently toss with the diced peaches and lemon juice until evenly coated.
- Spread the peach filling evenly over the prepared crust.
- Squeeze portions of the remaining crumb mixture into loose clusters and scatter them over the peaches, leaving a few areas of fruit visible.
- Bake for about 40–45 minutes in a metal pan at 375°F, or 50–55 minutes in a glass pan at 350°F, until the topping is lightly golden and the filling is bubbling around the edges.
- Allow the bars to cool completely, then refrigerate until firm enough to slice neatly.
- Whisk together the powdered sugar, almond extract, and milk until smooth, then drizzle over the chilled bars just before serving if desired.
