  • 1 cup Creamy peanut butter
  • ½ cup Brown sugar - Packed
  • ½ cup Granulated sugar
  • 1 Egg Large
  • 1 teaspoon Vanilla extract
  • cups All-purpose flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 24–30 cups Mini peanut butter - Unwrapped
Optional Add-ins:
  • ½ cup Mini chocolate chips - For extra chocolate boost
  • cup Chopped peanuts - Adds crunch
  • To taste Coarse sea salt - For sprinkling on top

Equipment

  • 1 Large mixing bowl (For combining ingredientse)
  • 1 Electric mixer (Hand or stand mixer)
  • 2 Cookie sheets (Lined with parchment paper)
  • 1 Cookie scoop (Or tablespoon)

Method
 

  1. Beat peanut butter and sugars, add egg and vanilla, mix in dry ingredients
  2. Preheat oven, line baking sheets, unwrap peanut butter cups
  3. Scoop dough, place on sheets, bake until set
  4. Press mini peanut butter cups into hot cookies
  5. Let cookies cool on rack before storing
