Filling

Method
 

  1. Combine flour, cold butter, salt, and water to create a flaky pie dough from scratch.
  2. Roll out the chilled dough and carefully transfer it into a pie plate, then chill again.
  3. In a saucepan, cook the crushed pineapple, sugar, and cornstarch until thick and bubbly.
  4. Temper the egg yolks with hot filling, then stir into mixture with butter and vanilla.
  5. Pour the finished filling into the prepared crust and smooth the top.
  6. Bake at 425°F, then reduce to 350°F and continue until golden and bubbling.
  7. Let the pie cool completely to set before slicing and serving.
