Ingredients
  

  • ¾ cup all-purpose flour Can substitute with gluten-free flour for a GF version
  • ¼ cup chocolate whey protein Choose your preferred protein powder
  • 2 tablespoon cocoa powder Unsweetened cocoa powder works best
  • 1 teaspoon espresso powder Optional enhances chocolate flavor
  • 8 oz semi-sweet chocolate chips Melted and cooled
  • ½ cup avocado oil For healthy fats can use coconut oil if preferred
  • cup coconut sugar Unrefined can substitute with brown sugar
  • 2 eggs Room temperature for better mixing
  • 1 teaspoon vanilla extract Adds sweetness and depth
  • ¼ teaspoon salt Balances flavors
  • ¼ cup mini M&Ms For topping
  • Cooking spray For greasing the pan avocado oil spray works well

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line the bottom of an 8x8-inch baking dish with parchment paper and spray the pan with cooking spray.
  3. In a large bowl, whisk together the flour, protein powder, cocoa powder, and espresso powder until fully combined.
  4. Melt the chocolate chips in a microwave-safe bowl for 1 minute. Stir and continue microwaving in 30-second intervals until melted and smooth. Allow to cool to room temperature.
  5. In a separate bowl, whisk together the melted chocolate, avocado oil, and coconut sugar until smooth.
  6. Add the eggs, vanilla extract, and salt to the wet mixture and stir until fully incorporated.
  7. Fold in the dry ingredients using a silicone spatula until just combined. Be careful not to overmix.
  8. Pour the batter into the prepared baking dish and spread it evenly. Sprinkle with mini M&Ms.
  9. Bake for 25 minutes or until a toothpick inserted into the center comes out mostly clean. Remove from the oven and let the brownies cool in the pan for 10 minutes before cutting into squares.
