Method
- Preheat the oven to 350°F (175°C).
- Line the bottom of an 8x8-inch baking dish with parchment paper and spray the pan with cooking spray.
- In a large bowl, whisk together the flour, protein powder, cocoa powder, and espresso powder until fully combined.
- Melt the chocolate chips in a microwave-safe bowl for 1 minute. Stir and continue microwaving in 30-second intervals until melted and smooth. Allow to cool to room temperature.
- In a separate bowl, whisk together the melted chocolate, avocado oil, and coconut sugar until smooth.
- Add the eggs, vanilla extract, and salt to the wet mixture and stir until fully incorporated.
- Fold in the dry ingredients using a silicone spatula until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking dish and spread it evenly. Sprinkle with mini M&Ms.
- Bake for 25 minutes or until a toothpick inserted into the center comes out mostly clean. Remove from the oven and let the brownies cool in the pan for 10 minutes before cutting into squares.
