Ingredients
  

  • ½ cup 113g unsalted butter (for melting)
  • 10 cups 430g mini marshmallows (divided into 8 cups and 2 cups)
  • 3 teaspoon pumpkin pie spice for homemade version see note
  • ½ teaspoon salt for balance
  • 1 teaspoon vanilla extract for flavor
  • 8 cups 224-240g Rice Krispies cereal (for crunch)
  • Orange food coloring optional for festive color

Method
 

  1. Measure out 10 cups of mini marshmallows, setting 2 cups aside. Measure 8 cups of Rice Krispies cereal and set aside.
  2. Line a 9×13 inch baking dish with parchment paper or grease with butter.
  3. In a large saucepan, melt the butter and 8 cups of mini marshmallows over medium-low heat. Stir constantly until melted.
  4. Stir in the pumpkin pie spice, salt, vanilla extract, and orange food coloring (optional).
  5. Add the remaining 2 cups of marshmallows and stir until they are about halfway melted. Remove the pan from heat.
  6. Stir in the Rice Krispies cereal until completely coated.
  7. Transfer the mixture to the prepared baking dish. Gently press the Rice Krispies into the pan. For an airy texture, avoid pressing too hard. For easier pressing, slightly wet your hands to prevent sticking.
  8. Allow the mixture to set for about 1 hour. Once set, slice into squares and enjoy!
