- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a standing mixer or using a handheld mixer, combine the softened butter with the granulated sugar and brown sugar. Beat until the mixture is light and fluffy, about 1-2 minutes.
- Add the egg and vanilla extract to the mixture. Beat until just combined—do not overmix.
- Stir in the flour, baking soda, and salt until the dough comes together.
- Fold in the chocolate chips and Reese’s Pieces, mixing until just incorporated.
- Using a medium cookie scoop or a spoon, form dough into 1.5-2 tablespoon sized balls. Place the dough balls on the prepared baking sheets, spaced about 3-4 inches apart.
- Bake the cookies for 7-11 minutes, or until the edges are set and slightly golden. The cookies should look soft and pale in the center—this ensures a chewy texture. Remove from the oven and let them sit on the baking sheet for 5 minutes before transferring to a cooling rack.
- While the cookies are still hot, sprinkle a generous pinch of flaky sea salt on top.
