Ingredients
  

  • 1 cup semisweet chocolate roughly chopped or in chips
  • ¾ cup salted butter can substitute unsalted butter or coconut oil
  • 3 large eggs room temperature
  • 1 cup granulated sugar white or organic cane sugar
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour or gluten-free flour if needed
  • 2 tablespoons cocoa powder unsweetened
  • ½ teaspoon fine sea salt or kosher salt

Method
 

  1. Preheat oven to 350°F (177°C) and grease a 10-inch cast iron skillet with butter.
  2. Melt the chocolate and butter in a microwave-safe bowl or on the stovetop over low heat, stirring until smooth. Set aside.
  3. In a large mixing bowl, beat the eggs for 1 minute or until pale and thick.
  4. Add the granulated sugar and continue beating for an additional 1 minute until the mixture is smooth and sugar is dissolved.
  5. Stir in the melted chocolate and butter mixture, followed by vanilla extract, and mix until smooth.
  6. Add the flour, cocoa powder, and salt to the bowl and mix gently on low speed until just incorporated. Be careful not to overmix.
  7. Spread the batter evenly into the prepared skillet.
  8. Bake for 18–20 minutes, or until the top is set and a toothpick inserted comes out mostly clean, with only a few moist crumbs. Avoid overbaking.
  9. Remove from the oven and allow to cool in the skillet for 10 minutes before serving. The brownies will firm up as they cool.
