These Starbucks Lime Frosted Coconut Bars are a tropical treat that tastes just like the Starbucks version, but even better!

Ingredients
  

  • ½ cup butter softened salted or unsalted
  • cup brown sugar packed
  • 1 egg at room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon coconut extract
  • 1& ¼ cup flour all-purpose
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup shredded coconut unsweetened extra for topping
  • cup white chocolate chips mini if possible
Lime Frosting
  • ½ cup butter softened
  • ½ teaspoon lime extract
  • 1& ½ cup powdered sugar confectioner's
  • 1 tablespoon heavy cream or milk
  • 2 tablespoon lime juice fresh
  • Food coloring green optional
  • 2 tablespoon white chocolate for drizzling melted

Method
 

  1. Preheat the oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Cream together the butter and brown sugar in a mixing bowl until smooth and creamy.
  3. Add the egg, vanilla extract, and coconut extract to the mixture and beat until fully combined.
  4. Gradually fold in the flour, baking powder, salt, and shredded coconut until the flour is just incorporated.
  5. Stir in the white chocolate chips and spread the batter evenly in the prepared baking pan.
  6. Bake for 15-16 minutes or until a toothpick inserted comes out clean. Let the bars cool completely.
  7. In a large mixing bowl, whip the softened butter, powdered sugar, heavy cream, lime juice, and lime extract together until light and fluffy.
  8. Add food coloring to the frosting to achieve the desired shade of lime green and mix thoroughly.
  9. Spread the lime frosting evenly over the cooled coconut bars.
  10. Drizzle melted white chocolate over the top of the frosted bars using a piping bag or spoon.
  11. Sprinkle additional shredded coconut on top and slice into 16 bars. Enjoy!
