- Preheat the oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- Cream together the butter and brown sugar in a mixing bowl until smooth and creamy.
- Add the egg, vanilla extract, and coconut extract to the mixture and beat until fully combined.
- Gradually fold in the flour, baking powder, salt, and shredded coconut until the flour is just incorporated.
- Stir in the white chocolate chips and spread the batter evenly in the prepared baking pan.
- Bake for 15-16 minutes or until a toothpick inserted comes out clean. Let the bars cool completely.
- In a large mixing bowl, whip the softened butter, powdered sugar, heavy cream, lime juice, and lime extract together until light and fluffy.
- Add food coloring to the frosting to achieve the desired shade of lime green and mix thoroughly.
- Spread the lime frosting evenly over the cooled coconut bars.
- Drizzle melted white chocolate over the top of the frosted bars using a piping bag or spoon.
- Sprinkle additional shredded coconut on top and slice into 16 bars. Enjoy!
