Ingredients

For the Crust:

  • 1 ½ cups Graham cracker crumbs - About 10–12 full sheets
  • cup Melted butter - Unsalted
  • 3 tablespoon Sugar - Granulated
  • 1 pinch Salt - Optional

For the Filling:

  • 8 oz Cream cheese - Softened, full-fat
  • ¾ cup Powdered sugar
  • 1 teaspoon Vanilla extract - Pure
  • ¼ cup Sour cream
  • ¾ cup Heavy cream - Whipped to soft peaks

For the Strawberry Topping:

  • 1 lb Strawberries - Divided, hulled
  • ½ cup Granulated sugar
  • 2 tablespoon Cornstarch
  • ¼ cup Water
  • 1 tablespoon Lemon juice - Fresh
  • 1 pinch Salt
  • 1 tablespoon Strawberry jam - Optional, for shine

Instructions

  • Crush graham crackers, mix with butter and sugar, press into pie dish, and bake.
  • Beat cream cheese with sugar, add vanilla and sour cream, fold in whipped cream.
  • Cook cornstarch mixture with sugar and lemon juice, stir in diced berries and jam.
  • Spread filling, chill, top with berries and glaze, then chill again before serving.
