Ingredients
  

Brownie Layer
  • 1 box strawberry cake mix dry mix
  • ½ cup unsalted butter melted and slightly cooled
  • 2 large eggs room temperature
  • 2 tablespoons strawberry gelatin dry powder
Cream Cheese Frosting
  • 8 ounces cream cheese softened to room temperature
  • 1 teaspoon vanilla extract pure vanilla preferred
  • 1 ½ cups powdered sugar sifted for a smoother frosting
  • 3 tablespoons milk adjust as needed for consistency
Strawberry Crunch Topping
  • 20 Golden Oreo cookies coarsely crushed
  • 4 tablespoons strawberry gelatin dry powder
  • 4 tablespoons salted butter melted

Method
 

  1. Preheat the oven to 350°F (175°C) and line or lightly grease an 8×8-inch baking pan for easy removal.
  2. Combine the strawberry cake mix, melted butter, eggs, and strawberry gelatin in a large bowl until a thick, smooth batter forms.
  3. Transfer the batter into the prepared pan, smooth the surface, and bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. Allow the brownies to cool completely before adding the frosting.
  4. Beat the softened cream cheese until smooth, then mix in the powdered sugar, vanilla extract, and milk until the frosting is creamy and easy to spread.
  5. Crush the Golden Oreo cookies into coarse crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  6. Stir the cookie crumbs together with the strawberry gelatin and melted butter until every crumb is evenly coated.
  7. Spread the cream cheese frosting evenly over the cooled brownies using an offset spatula or the back of a spoon.
  8. Scatter the strawberry crunch mixture evenly over the frosting and gently press it down so it sticks well.
  9. Cut into 9 equal squares and serve immediately or chill briefly before slicing for cleaner pieces.
