Ingredients

the Pastries:

  • 2 sheets frozen puff pastry thawed
  • 2 cups fresh strawberries sliced
  • ¼ cup granulated sugar
  • 1 large egg for egg wash
  • 1 tablespoon water
  • 2 tablespoons coarse sugar for sprinkling

the Cream Filling:

  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened

the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  • Toss sliced strawberries with granulated sugar in a bowl.

Make cream filling:

  • Beat cream cheese until smooth
  • Whip heavy cream with powdered sugar and vanilla
  • Fold whipped cream into cream cheese
  • Refrigerate
  • Cut each pastry sheet into 9 squares (3x3 inches).
  • Make egg wash with egg and water.

Assemble pastries:

  • Brush edges with egg wash
  • Add cream filling in center
  • Top with strawberries
  • Fold opposite corners to center
  • Brush tops with egg wash
  • Sprinkle with coarse sugar
  • Bake 18-22 minutes until golden brown.
  • Cool 10 minutes before glazing.

Notes
