Method
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Toss sliced strawberries with granulated sugar in a bowl.
Make cream filling:
- Beat cream cheese until smooth
- Whip heavy cream with powdered sugar and vanilla
- Fold whipped cream into cream cheese
- Refrigerate
- Cut each pastry sheet into 9 squares (3x3 inches).
- Make egg wash with egg and water.
Assemble pastries:
- Brush edges with egg wash
- Add cream filling in center
- Top with strawberries
- Fold opposite corners to center
- Brush tops with egg wash
- Sprinkle with coarse sugar
- Bake 18-22 minutes until golden brown.
- Cool 10 minutes before glazing.
