- In a large bowl, beat room temperature butter with granulated and brown sugars for 3–4 minutes until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract until combined.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Scoop dough into 1.5 tablespoon-sized balls, roll in granulated sugar, place on cookie sheet 2 inches apart, and slightly flatten.
- Preheat oven to 350°F (175°C). Bake for 10–12 minutes until edges are lightly golden and centers are slightly underdone.
- Let cookies rest on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
- Chill dough 2 hours, roll between parchment paper, cut shapes, and bake 8–10 minutes.
