Ingredients
1cupUnsalted butter- Room temperature
1cupGranulated sugar- Plus extra for rolling
¼cupBrown sugar- Light or dark
2large Eggs
2teaspoonPure vanilla extract
2 ¾cupsAll-purpose flour- Spoon and level
2teaspoonBaking powder
½teaspoonSalt
Colored sugar or sprinkles- Optional, for topping
Instructions
In a large bowl, beat room temperature butter with granulated and brown sugars for 3–4 minutes until light and fluffy.
Beat in eggs one at a time, then mix in vanilla extract until combined.
In another bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
Scoop dough into 1.5 tablespoon-sized balls, roll in granulated sugar, place on cookie sheet 2 inches apart, and slightly flatten.
Preheat oven to 350°F (175°C). Bake for 10–12 minutes until edges are lightly golden and centers are slightly underdone.
Let cookies rest on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
Chill dough 2 hours, roll between parchment paper, cut shapes, and bake 8–10 minutes.
