Ingredients

  • 1 cup Unsalted butter - Room temperature
  • 1 cup Granulated sugar - Plus extra for rolling
  • ¼ cup Brown sugar - Light or dark
  • 2 large Eggs
  • 2 teaspoon Pure vanilla extract
  • 2 ¾ cups All-purpose flour - Spoon and level
  • 2 teaspoon Baking powder
  • ½ teaspoon Salt
  • Colored sugar or sprinkles - Optional, for topping

Instructions

  • In a large bowl, beat room temperature butter with granulated and brown sugars for 3–4 minutes until light and fluffy.
  • Beat in eggs one at a time, then mix in vanilla extract until combined.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  • Scoop dough into 1.5 tablespoon-sized balls, roll in granulated sugar, place on cookie sheet 2 inches apart, and slightly flatten.
  • Preheat oven to 350°F (175°C). Bake for 10–12 minutes until edges are lightly golden and centers are slightly underdone.
  • Let cookies rest on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
  • Chill dough 2 hours, roll between parchment paper, cut shapes, and bake 8–10 minutes.
