Ingredients
  

  • 1 ¾ cups 218.75 g all-purpose flour for the base of the cookie dough
  • ½ teaspoon 2 g baking soda helps the cookies rise
  • ½ teaspoon 2 g baking powder adds lightness to the cookies
  • ¾ teaspoon 4.5 g fine sea salt or table salt enhances flavor
  • ½ cup 113.5 g unsalted butter melted and cooled for a rich buttery texture
  • ½ cup 100 g granulated sugar adds sweetness
  • cup 73.33 g light or dark brown sugar packed provides depth of flavor
  • 1 large egg room temperature (binds the ingredients together)
  • 2 teaspoons 10 g ube extract for authentic ube flavor
  • ½ cup 118 g ube halaya sweetened ube jam for flavor and moisture
  • ¼ cup 50 g granulated sugar for rolling
  • ½ cup 60 g powdered sugar for rolling

Method
 

  1. In a large bowl, use a silicone spatula to mix the melted butter, granulated sugar, and brown sugar until smooth.
  2. Add the egg, ube extract, and ube halaya to the mixture, and stir until smooth.
  3. Add the flour, baking soda, baking powder, and salt to the bowl. Mix until no dry spots remain.
  4. Cover the dough with plastic wrap and refrigerate for 30 minutes or up to 2 days.
  5. Preheat your oven to 350°F (177°C) and line two baking trays with parchment paper.
  6. Pour the granulated sugar and powdered sugar into separate bowls for rolling.
  7. Use a cookie scoop to gather dough (about 2–3 tablespoons). Roll each scoop in granulated sugar, then powdered sugar, and place on the prepared baking trays, spacing the cookies about 3–4 inches apart.
  8. After placing the cookies on the trays, roll each dough ball again in powdered sugar to ensure a full coating.
  9. Bake one tray at a time for 9–11 minutes, or until the edges are set and the centers look mostly cooked through.
  10. Once baked, for a perfectly round cookie, place a large circular cutter or mug on top of the warm cookie and move it in a circular motion.
  11. Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely.
