Ingredients

  • 1 15.25-ounce box yellow cake mix pre-packaged
  • 1 3.4-ounce box instant vanilla pudding mix for extra fluffiness
  • ¾ cup sour cream or plain yogurt for tangy moisture
  • ¾ cup vegetable oil for richness
  • 3 large eggs for binding and structure
  • 2 teaspoons pure vanilla extract for flavor
  • ½ cup warm water to activate the ingredients

Method

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, pudding mix, sour cream, oil, eggs, vanilla, and warm water. Use a hand mixer to beat the mixture on medium speed for about 2 minutes until smooth and well combined.
  3. Grease two 9-inch cake pans and divide the batter evenly between the pans, smoothing it out with a spatula.
  4. Bake in the preheated oven for 25-30 minutes. Insert a toothpick into the center of the cakes—if it comes out clean, the cakes are done. Once baked, let the cakes cool in the pans for about 15 minutes, then turn them out onto a wire rack to cool completely.
  5. Once completely cooled, frost with your favorite frosting, like chocolate buttercream, and serve.
