- Add dates, walnuts, pecans, and ¼ cup of pistachios to the bowl of a food processor. Process until the mixture is chunky.
- Add shredded coconut, chia seeds, cacao powder, melted coconut oil, and vanilla extract to the food processor. Process again until the mixture is chunky and slightly clumping together. If the mixture is too dry, add 1-2 tablespoons of warm water.
- Add the remaining ¼ cup pistachios and dried cranberries, pulsing a few times until the pistachios are slightly broken up.
- Transfer the mixture into an 8x4 inch loaf pan lined with parchment paper. Press the mixture evenly toward the edges of the pan to form a compact layer.
- For the topping, add dark chocolate to a small saucepan and heat over low heat until fully melted. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring between each.
- Pour the melted chocolate over the bars, tilting the pan to ensure even coverage.
- Garnish the bars with chopped pistachios, dried cranberries, and chopped pecans. sprinkle a little Maldon sea salt on top.
- Place the pan in the freezer for 20-45 minutes to allow the brownies to harden.
- Once ready to serve, cut into 8 squares and enjoy! Store the brownies in the freezer, covered, for up to 1 month.
