Ingredients
  

For the bars:
  • 1 cup 173g packed pitted Medjool dates for natural sweetness
  • ¼ cup 28g raw walnuts for healthy fats
  • ¼ cup 28g raw pecans halves for crunch and richness
  • ½ cup 28g shelled pistachios divided for flavor and texture
  • ¼ cup 21g unsweetened finely shredded coconut for added texture and flavor
  • 1 tablespoon chia seeds for fiber and omega-3s
  • 3 tablespoons unsweetened cacao powder or cocoa powder (for deep chocolate flavor)
  • 1 tablespoon melted virgin coconut oil for binding and richness
  • 1 teaspoon vanilla extract for flavor
  • ¼ teaspoon sea salt to enhance sweetness and flavor
  • ¼ cup 30g dried cranberries (or dried cherries or goji berries) for tartness and chewiness
  • 1 tablespoon warm water if necessary to adjust texture
For the topping:
  • 2 ounces dark chocolate bar vegan if desired (for the glossy topping)
To garnish:
  • 1 tablespoon shelled chopped pistachios for topping
  • 1 tablespoon dried cranberries cherries or goji berries for topping
  • 1 tablespoon chopped pecans for topping
  • Maldon sea salt for sprinkling on top

Method
 

  1. Add dates, walnuts, pecans, and ¼ cup of pistachios to the bowl of a food processor. Process until the mixture is chunky.
  2. Add shredded coconut, chia seeds, cacao powder, melted coconut oil, and vanilla extract to the food processor. Process again until the mixture is chunky and slightly clumping together. If the mixture is too dry, add 1-2 tablespoons of warm water.
  3. Add the remaining ¼ cup pistachios and dried cranberries, pulsing a few times until the pistachios are slightly broken up.
  4. Transfer the mixture into an 8x4 inch loaf pan lined with parchment paper. Press the mixture evenly toward the edges of the pan to form a compact layer.
  5. For the topping, add dark chocolate to a small saucepan and heat over low heat until fully melted. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring between each.
  6. Pour the melted chocolate over the bars, tilting the pan to ensure even coverage.
  7. Garnish the bars with chopped pistachios, dried cranberries, and chopped pecans. sprinkle a little Maldon sea salt on top.
  8. Place the pan in the freezer for 20-45 minutes to allow the brownies to harden.
  9. Once ready to serve, cut into 8 squares and enjoy! Store the brownies in the freezer, covered, for up to 1 month.
