Here's how to make these No Bake Superfood Brownies simple, delicious bars from start to finish.

Blend the base: Add the dates, walnuts, pecans, and ¼ cup of pistachios to your food processor. Process until the mixture looks chunky and starts to stick together, usually about 1 minute.

If the mixture feels too dry and won't hold together when you pinch it, add 1 to 2 tablespoons of warm water and pulse again.

Mix in the extras: Add the remaining ¼ cup pistachios and the dried cranberries. Pulse a few times until the pistachios are slightly chunky but not completely broken down. You want some texture.

  • 1 tablespoon melted virgin coconut oil for binding and richness
  • 1 teaspoon vanilla extract for flavor

  4. Transfer the mixture into an 8x4 inch loaf pan lined with parchment paper. Press the mixture evenly toward the edges of the pan to form a compact layer.
  5. For the topping, add dark chocolate to a small saucepan and heat over low heat until fully melted. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring between each.
  6. Pour the melted chocolate over the bars, tilting the pan to ensure even coverage.
