This pistachio mousse gets its flavor and pale green color from real pistachios and pistachio paste, not pudding mix or food coloring. The base is blended smooth, folded into softly whipped cream, and chilled until it's light but spoonable. Hands-on time is about 20 minutes; the fridge does the rest in 2 hours.
The first time Liam tried it, he asked if he could have it for breakfast. We top ours with a thin layer of chocolate ganache and chopped pistachios, like in the photos, but it's just as good plain.

Why This Recipe Works
- Two kinds of pistachio. Ground nuts give body; pistachio paste gives the deep, roasted flavor.
- Blended, not just ground. Blending the nuts with the powdered sugar turns them into a paste, so the mousse isn't gritty.
- Soft peaks, not stiff. Softly whipped cream folds in without lumps and keeps the mousse airy.
- Optional gelatin. Skip it for same-day cups; add it for piping, cake filling, or serving the next day.

Pistachio Mousse Ingredients
- Shelled pistachios: unsalted. Raw, peeled pistachios give the brightest green; roasted give deeper flavor.
- Pistachio paste: 100% pistachio if you can find it. If you use sweetened pistachio cream, cut the sugar by 2 tablespoons.
- Heavy whipping cream: very cold, at least 36% fat.
- Powdered sugar: dissolves instantly, so there's no grainy texture.
- Vanilla and almond extract: a tiny amount of almond makes the pistachio taste stronger.
- Salt: just a pinch.
- Optional stabilizer: unflavored gelatin, or mascarpone.
- Chocolate ganache (optional topping): dark chocolate and cream.

How To Make Pistachio Mousse
- Chill your tools. Put the mixing bowl and beaters in the freezer for 15 minutes. Warm cream won't whip properly.
- Make the pistachio base. Blend the pistachios with the powdered sugar for 2-3 minutes until it forms a damp paste. Add the pistachio paste, vanilla, almond extract and salt, and blend until smooth.
- Add gelatin (optional). Sprinkle the gelatin over the cold water and let it sit 5 minutes. Microwave 8-10 seconds until melted, then whisk it straight into the pistachio base.
- Whip the cream. Whip the cold cream on medium-high to soft peaks, 3-4 minutes. The peaks should droop at the tip.
- Fold. Stir one-third of the cream into the base to loosen it. Fold in the rest with a spatula, cutting down the middle and lifting up the sides, just until no white streaks remain.
- Chill. Spoon or pipe into 6 glasses. Cover and chill at least 2 hours (4 hours with gelatin).
- Top and serve. For the ganache, heat the cream until steaming, pour it over the chopped chocolate, wait 2 minutes and stir smooth. Cool 10 minutes, spoon a thin layer over each mousse, then add chopped pistachios and a little whipped cream.

Common Problems and Fixes
- Runny mousse: the cream was under-whipped or warm, or the mixture was stirred instead of folded. Whip to soft peaks in a cold bowl, fold gently, and use gelatin next time.
- Grainy mousse: the pistachios were only chopped. Blend them with the sugar until damp, or press the base through a sieve.
- Brownish color: roasted or skin-on pistachios. Use raw, peeled pistachios for a bright green.
- Lumpy mousse: the cream was whipped to stiff peaks. Stop at soft peaks.
Variations
- White chocolate pistachio mousse: melt 4 oz white chocolate, cool to lukewarm, and whisk it into the pistachio base before folding.
- Plain pistachio cups: skip the ganache and top with whipped cream, chopped pistachios and raspberries.
- Pistachio mousse cake filling: use the gelatin option and chill the filled cake 4 hours before slicing.
Storage
- Fridge: covered, up to 3 days; best within 2 days. Add toppings just before serving.
- Freezer: up to 1 month in an airtight container. Thaw overnight in the fridge; the texture gets slightly denser.
Pistachio Mousse FAQ
What makes a good pistachio mousse?
Strong pistachio flavor from real nuts and paste, an airy texture from softly whipped cream, and just enough sugar that the pistachios stay the main flavor.
Can I make pistachio mousse without gelatin?
Yes. Without gelatin it holds well for about a day. Use gelatin or mascarpone if you need it to hold longer, or to pipe it.
Can I use pistachio pudding mix instead?
It works as a shortcut, but the flavor is milder and the green color comes from dye. This recipe uses real pistachios and pistachio paste.
Can I make pistachio mousse ahead of time?
Yes, up to 2 days ahead. Keep it covered in the fridge and add the ganache and toppings just before serving.
