Published: Apr 16, 2026 by Emily Johnson · This post may contain affiliate links · Leave a Comment

This savory galette brings together soft sautéed zucchini, sweet corn, juicy tomatoes, and melted cheese, all tucked into a buttery, golden crust that shatters with every bite. I first made this on a Sunday afternoon when I had a bunch of vegetables sitting in my fridge, and it turned out so good that it's become my favorite way to use up fresh summer produce. It's surprisingly easy to put together, and the crust comes out flaky and crisp every single time.

What Is a Savory Galette?

A Savory Galette is a free-form pastry that doesn't require a pie dish or perfect crimping. You simply roll out the dough, add your filling in the center, and fold the edges over in a relaxed, rustic style. Unlike pies, galettes are meant to look homemade and imperfect, which makes them so much easier and less stressful to make.

Savory galettes are filled with vegetables, cheese, herbs, and sometimes eggs or meat. They're incredibly versatile and work beautifully for breakfast, lunch, or dinner. This vegetable galette is loaded with fresh summer vegetables and a mix of Parmesan and cheddar cheese, giving it a rich, savory flavor that pairs perfectly with the buttery crust.

This homemade Savory Galette is the kind of recipe you'll make again and again. It's flexible, forgiving, and always comes out looking beautiful. Whether you're serving it for breakfast, lunch, or dinner, it's sure to become a favorite in your kitchen. Savory Galette Ingredients

Here's everything you need to make this easy Savory Galette recipe, broken down by component.

See Recipe Card Below This Post For Ingredient Quantities

For the Crust:

  • All-purpose flour: Forms the structure of the crust and gives it that tender, flaky texture.
  • Fine sea salt: Balances the butter's richness and enhances the overall flavor.
  • Granulated sugar: Just a hint of sweetness to round out the savory filling.
  • Salted butter (cold & cubed): Creates the flaky layers in the crust. Make sure it's cold so it doesn't melt into the flour too quickly.
  • Ice water: Brings the dough together without making it tough. Cold water keeps the butter solid, which is key for flakiness.

For the Filling:

  • Olive oil: Used to sauté the vegetables until they're soft and caramelized.
  • Onion (diced): Adds sweetness and depth to the vegetable filling.
  • Minced garlic: Brings a warm, savory note that ties everything together.
  • Red bell pepper (diced): Adds color, sweetness, and a slight crunch.
  • Zucchini (diced): Tender and mild, it soaks up all the flavors from the other vegetables.
  • Baby tomatoes (halved): Burst with juice as they cook, adding brightness and acidity.
  • Corn (fresh or frozen): Sweet and crunchy, corn adds texture and a pop of color.
  • Sea salt: Seasons the vegetables and brings out their natural flavors.
  • Pepper: Adds a gentle kick and balances the sweetness of the vegetables.
  • Fresh basil (julienned): Brings a fresh, herbal note that complements the cheese beautifully.
  • Parmesan cheese: Adds a nutty, salty richness to the filling.
  • Cheddar cheese: Melts into the vegetables and adds a creamy, tangy flavor.

For the Egg Wash:

  • Egg yolk: Gives the crust a beautiful golden, shiny finish.
  • Heavy cream: Helps the egg wash brush on smoothly and adds extra richness.

How to Make Savory Galette

Here's everything you need to know to make this homemade Savory Galette from scratch.

Make the Crust:

Combine dry ingredients: Place flour, salt, and sugar in a food processor fitted with an "S" blade and pulse a few times to mix everything together.

Add butter and water: Add the cold, cubed butter and ice water to the processor. Pulse until the mixture looks like coarse crumbs and starts to stick together when you pinch it between your fingers.

Form the dough: Remove the dough from the processor. It will look crumbly, but that's normal. Press it together with your hands and shape it into a flat disc about 1 inch thick.

Chill: Wrap the dough tightly in plastic wrap and refrigerate for at least 1 hour or overnight. If you're chilling it overnight, place the wrapped dough in an airtight container to keep it fresh.

Make the Filling:

Preheat oven: Preheat your oven to 400°F (200°C) so it's ready when you assemble the galette.

Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, zucchini, and tomatoes. Cook for about 10 minutes, stirring occasionally, until the onions and bell peppers are soft and starting to caramelize.

Add seasonings and herbs: Stir in the corn, salt, pepper, and fresh basil. Mix everything together and let it cook for another minute or two.

Stir in cheese: Remove the skillet from the heat and stir in the Parmesan and cheddar cheese. The cheese will melt slightly from the heat of the vegetables, creating a creamy, cohesive filling.

A skillet filled with sautéed vegetables including tomatoes, zucchini, corn, and onions, stirred together with a wooden spoon.

Make the Egg Wash:

Whisk together: In a small bowl, whisk the egg yolk and heavy cream until smooth. Set it aside until you're ready to brush the crust.

A bowl of freshly beaten eggs with a smooth, frothy yellow surface.

Assemble the Galette:

Prepare baking sheet: Line a large baking sheet with a silicone baking mat or parchment paper to prevent sticking.

Roll out dough: Remove the chilled dough from the refrigerator. On a well-floured surface, roll it into a 12-inch circle. Don't worry if it's not perfectly round; rustic is the whole point.

Transfer dough: Carefully lift the dough and place it on the prepared baking sheet.

Add filling: Spoon the vegetable and cheese filling into the center of the dough, leaving about a 1 ½-inch border around the edges.

Fold edges: Gently fold the dough edges up and over the filling, overlapping and pinching the folds as you go. Make sure there are no holes or cracks so the filling doesn't leak out.

Brush with egg wash: Use a pastry brush to coat the folded crust with the egg wash. This gives it that gorgeous golden color.

Bake, Cool, and Serve:

Bake: Place the galette in the preheated oven and bake for 28 to 32 minutes, or until the crust is golden brown and crisp.

Cool slightly: Let the galette cool on the baking sheet for a few minutes before slicing. This helps the filling set and makes it easier to cut.

Serve warm: Slice into wedges and serve while it's still warm and the cheese is gooey.

Substitutions and Variations

This cheese Savory Galette is incredibly flexible. Here are some easy swaps and ideas to make it your own.

Use different vegetables. Try mushrooms, spinach, kale, asparagus, or roasted butternut squash. Just make sure to cook them down first so they don't release too much moisture.

Swap the cheese. Goat cheese, feta, gruyere, or mozzarella all work beautifully. You can also use a mix of whatever cheese you have on hand.

Make it vegan. Use vegan butter for the crust and skip the egg wash or brush with a little olive oil. Use dairy-free cheese or skip the cheese entirely and add more herbs and nutritional yeast for flavor.

Add protein. Cooked bacon, sausage, or shredded chicken make this Savory Galette even heartier.

Try different herbs. Fresh thyme, oregano, rosemary, or chives add a different flavor profile. You can also sprinkle everything bagel seasoning on top before baking.

Make it spicy. Add red pepper flakes, diced jalapeños, or a drizzle of hot honey over the finished galette.

Equipment For Savory Galette

Here's what makes this Savory Galette come together smoothly.

  • Food processor: Makes the dough in minutes with minimal effort. If you don't have one, you can use a pastry cutter or two forks to cut the butter into the flour.
  • Baking sheet: A large, rimmed baking sheet works best to catch any drips from the filling.
  • Rolling pin: Helps you roll the dough into an even circle. A wine bottle works in a pinch.
  • Chef's knife and cutting board: For chopping all the vegetables.
  • Large skillet: To sauté the vegetables until they're soft and flavorful.
  • Measuring cups and spoons: For accurate ingredient amounts.
  • Spatula: For stirring the filling and transferring the galette to a serving plate.

Storage Tips

Refrigerator: Store leftover galette in an airtight container in the fridge for up to 3 days. Reheat slices in a 350°F oven for about 10 minutes to crisp up the crust.

Freezer: You can freeze the baked Savory Galette for up to 2 months. Wrap it tightly in plastic wrap and then in foil. Thaw in the fridge overnight and reheat in the oven.

Freeze unbaked: Assemble the galette, but don't brush with egg wash or bake it. Freeze it on the baking sheet until solid, then wrap it well. When you're ready to bake, brush with egg wash and bake from frozen, adding a few extra minutes to the baking time.

Make-ahead dough: The dough can be made up to 2 days in advance and kept in the fridge, or frozen for up to 3 months.

Expert Tips

Keep the butter cold. Cold butter is the secret to a flaky Savory Galette crust. If your kitchen is warm, pop the butter back in the fridge or freezer for a few minutes before using it.

Don't skip the chill time. Chilling the dough allows the gluten to relax and the butter to firm up, which makes the crust tender and flaky. If you're short on time, 1 hour is enough, but overnight is even better.

Drain excess moisture. If your vegetables release a lot of liquid while cooking, drain some of it off before adding the cheese. Too much moisture can make the crust soggy.

Roll the dough on parchment. If you're nervous about transferring the dough, roll it out on a piece of parchment paper, then slide the whole sheet onto your baking sheet.

Don't overfill. Leave enough border so you can fold the dough over the filling without it spilling out. About 1 ½ inches is perfect.

FAQ

How to make a savoury galette?

Start by making a simple butter-based dough and chilling it for at least an hour. Sauté your favorite vegetables with garlic and herbs, then mix in cheese. Roll out the dough, add the filling in the center, fold up the edges, brush with egg wash, and bake until golden. It's rustic, easy, and doesn't require any special shaping skills.

What to put in a Savory Galette?

You can fill a Savory Galette with almost anything. Roasted vegetables, sautéed greens, caramelized onions, mushrooms, tomatoes, cheese, fresh herbs, cooked meats, or even eggs all work beautifully. The key is to make sure your filling isn't too wet, so it doesn't make the crust soggy.

What are the three different types of galettes?

Galettes come in many forms, but three popular types are sweet fruit galettes (like apple or berry), savory vegetable galettes (like this one), and galette des rois, a traditional French almond-filled pastry served during Epiphany. Each has its own flavor profile and filling style, but they all share that rustic, free-form crust.

What are the fillings for Savory Galette?

For Savory Galette, common fillings include roasted or sautéed vegetables, cheese, herbs, caramelized onions, mushrooms, tomatoes, zucchini, and leafy greens. You can also add eggs, bacon, or sausage. For sweet galettes, use fresh or roasted fruit like apples, peaches, berries, or pears with a little sugar and spice. My favorite savory combo is the one in this recipe with zucchini, tomatoes, corn, and cheese.
